All the pitas were puffy!

My daughter doesn't have her day care this week. So I try to find some activity we can enjoy together.

Today I was jumping all the pitas were puffy. Often one or two are flat and I just thought it's because of my old oven (excuse me oven!).

What I tried were:
- Kneading dough longer (5 minutes for the slowest speed and 10 minutes for the middle speed)
- Shaping dough gently. I've been gentle but more this time. I didn't mind the rolled out dough was a bit thicker than usual.

In addition to these, I used mist this time. The pitas were nicely moist and soft.

Then we had a good pita & falafel dinner for the first hot day of the year :)

今週は保育ママがお休みなので子どもが日中家にいます。週末から昨日にかけて仕事を詰めに詰め、今週残りはせっかくだしもう一緒に遊ぼうと w

子どもと遊びながら焼いたピタが全部膨らんで夕方台所で小躍りしかけました。大抵1-2個、ぺちゃんこか膨らみかけのができるのですが、うちオーブン古いし庫内の温度に偏りでもあるんだろうなとオーブンのせいにしていました（ごめん、オーブン）。

あまりにうれしく少し今回変えてみたところをメモしておきます：
- 生地をよく捏ねる（低速5分、真ん中の速度で10分）
- いつも以上に優しく成形。あらかた麺棒でのばしてあとは手でやさしく広げていきました。力を入れなかったのでいつもより厚め＆小さめですが気にしない気にしない。

その他、膨らみとは関係なさそうですが、今日は手元に霧吹きがあったので生地をオーブンに直前に庫内と生地表面に霧吹きをしてみました。いい感じの湿度と柔らかさで焼きあがりました。

子どもが夕食前にひとつ食べてしまいましたが、今年初の25度ごえの1日、さわやかなファラフェル＋ピタの夕食と相成りました。食後の子どもの世話はお父ちゃんにお願いしてもちろん飲みました ;)
