Spring Salad with Pineapple and Peanut Butter Dressing

Who is up for a simple, colorful salad? I love salads, especially during the hotter tropical months... still waiting for the tropical rain to come!

## Ingredients (serves 2)
### For the peanut butter dressing
1 clove of garlic, minced
1 tsp fresh grated ginger (or 1-inch)
1/2 tsp chili paste, or to taste
1/2 lime/lemon, juice only (use less if using lemon)
1 tbsp soy sauce
1/4 cup unsalted peanut butter
1/4 cup cilantro or parsley, chopped
1/4 cup unsweetened coconut milk
sea salt, to taste

### For the salad
1 cup red cabbage, shredded
1/2 cup spring onions, finely chopped
1 cup fresh pineapple, chopped
1/2 cup bell pepper, sliced
1/2 cup carrot, julienned
2 cup salad greens of your choice

## Directions
1. For the peanut dressing: combine all ingredients in a small blender and process until smooth. Add more coconut milk if needed. Add sea salt to taste.
2. Combine all salad ingredients in a large bowl. Toss to combine and finish with peanut sauce. ![DSCF8633.JPG]

I love peanut butter dressing! I often use it actually and got inspired to make it by one of my fav Thai dishes Pad Thai which has peanut butter sauce too. Well at least the one I know and love. Because they make pad Thai in so many different ways.
