Tortizza - pizza with the thinnest crust possible

Yes, its a pizza on top of a tortilla bread - Tortizza! 

I've never called myself a cook, but my experiments somehow always taste good. This year I discovered that I'm terrible at making burritos and wraps (not that the flavor is bad, but I can't wrap things for my life). Frustrated with my failed attempts, I still had all these tortilla breads not living up to their potential... Then, I had an epiphany (shown here as a hip unicorn) to make thin crust pizzas using tortillas. At the time I thought I was the genius that invented it, but then google search told me that everyone and their aunt had thought of this recipe and also named it "tortizza". Still, it became a big hit in my house, and I've since made dozens of tortizzas,  using different ingredients - getting unique flavors and looks. Essentially, this is an ideal lunch/dinner that you can make daily on a low budget, with less carbs and fast. Now I'm going to share with you one of the recipes I made, including photos I've taken in the process:

<h5>INGREDIENTS:</h5>

- 1 one large tortilla. <i>(can be spinach, whole grain or the original)</i>
- 1/4 Tomato souse <i>(or Pesto spread if tomato is too acidic for you). </i>
- Toppings: 6 sliced kalamata olives / 1/4 red onions chopped / lots of kale leaves. 
- Cheeses: Pepper-jack and havarti sliced or cut <i>(depending on the brand you buy). </i>
- Spices: salt / black pepper / cayenne Pepper <i>(if you like it hot)</i> / sesame seeds / dry oregano and dill

 Cooking: Aprox. 40 min
<h5>1: Prep.</h5>Start by pre-hitting the oven to 180 C (or ~350 F).
Place the tortilla on an oven grilling trey (but not in the oven)
<h5>2: Base</h5>Spread the souse evenly and add some black pepper, cayenne pepper and dry oregano.
<h5>3: Toppings</h5>Arrange all toppings evenly on the tortilla finishing with the greens on top, then add some salt (if needed) and sesame seeds (optional).
<h5>4: Cheese</h5>Scatter the cheese evenly and cover as much area of the tortilla as possible.
Sift some dill on the cheese (optional)
You are all set!
<h5>5: Baking</h5> Place the grilling tray in the oven and bake the tortizza for 20 min. Then set the oven to broil and the timer to 5-10 more minutes (or until the cheese appears golden on top). 
<h5>6: Serving</h5> Cut the tortizza to as many slices as you like, and Voila, bon appetite!

Ultimately, there are no rules, and you can get as creative as you like. No tortizza is ever alike! You can try adding white cheeses, basil leaves, mushrooms, sun dried tomatoes, meats <i>(unless you're vegetarian or vegan)</i>, etc. I've even added quail eggs from our backyard.

this looks great, never thought of it! I normally buy the cheapest frozen pizza (usually generic 3 cheese) and add my own toppings (and more cheese over top of it all); very often I add things I have in the fridge that absolutely need to be used up. The varieties are endless.

Indeed! we used to do that too in our house, but now we are all about the thin crust and your can't get thinner than a tortilla. plus no more frozen pizzas and boxes, and the oven needs to run less :) but Yes if you have a dough and cheese the rest is all your creativity!
