<html> <p>I learned a<em> lot</em> about food from my mother.</p> <p>When I was a kid, my mom had a private catering service, and I was handed a knife and taught how to peel potatoes and chop veggies when I was maybe six or seven. </p> <p>By the time I left home, I'd already <em>forgotten</em> more about food than many people <em>learn</em> in an entire lifetime. Of course, this was also part of the greater "<em>World According To Mom</em>" which included the ambitious "<em>I'm NOT setting some helpless man who can't cook free into the world!</em>"</p> <p> <img src="https://i.imgur.com/FzXp5W7.jpg" title="MeatPie" /><br> <em>The leftover pork roast turned into a delicious piece with potatoes, onions and peas</em> </p> <h2><em>There Will Be NO Food Wasted!</em></h2> <p>There was no waste at our house. Although we were by no means poor, my mom was morally opposed to the idea of throwing "<em>perfectly good</em>" food away.</p> <p>It wasn't until years later that I learned that some people don't like leftovers... and consider them "<em>old</em>" food, or can't stand the idea of eating "<em>the same thing,</em>" even two days in a row.</p> <p>Truth be known, even our own kids (now adults and in their late 20's) started to become resentful of leftovers, for a variety of reasons.</p> <p>But I digress.</p> <h2><em>It's About the Flavor!</em></h2> <p>To me, dishes made from leftovers are often the <em>most flavorful</em>... because the original ingredients and spices have had a chance to "<em>settle</em>" and become thoroughly mingled. </p> <p> <div class="pull-right"> <p><img src="https://i.imgur.com/i5PykSV.jpg" alt="FallLeaves" /><br /> <em>Fall leaves</em></p> </div> </p> <p>I'd say the most useful lesson my mom taught me about cooking leftovers wasn't a recipe, or a style... but how to <em>approach</em> taking existing food and making something good. She said that most people who complain about the quality or taste of their dishes made from leftovers start with an "idea" of something they want to make, and then try to make the ingredients (i.e. the leftovers) <em>fit</em> that idea. </p> <p>And usually? Not possible, or not successful. According to her, the <em>best</em> leftover dishes come from pulling out everything you have available... and starting from "<em>this is what we HAVE... what can it be turned into?</em>" </p> <p>The remnants of a grilled chicken isn't "<em>reheated chicken,</em>" but a great chicken pot pie.</p> <p>The leftover bits of a pork roast becomes pork tacos. Or maybe a stir fry, when you add vegetables.</p> <p>All these years later, it's an approach that continues to stand me in good stead!</p> <p><em><strong>How about YOU?</strong></em> Do you like to cook with leftovers? My wife is a "recovering Mormon" and she knows how to bake pretty much anything into an awesome pie... here we have pork, onions, potatoes, celery, beans, gravy... and stick it in a home-made pie crust. Yum!

Recovering mormon, never heard that before. My mum ran a school canteen for a few years and is an amazing cook too. I had her do all the cooking for my wedding and we had the best food for next to nothing. Oh, and we lived on the leftovers for weeks.

First, I gotta complement the dragonflies on your pie crust. Beauty is important. We must have grown up in super similar households. Leftovers were eaten cold, reheated, and repurposed. I do the same. I hate throwing food out, although having a compost pile makes me hate it a tiny bit less. The kids will rummage past the leftovers for lunch only to beg for half when I'm not too lazy to reheat them. And you're spot on about mingled flavors. There's a host of foods that are better the next day.

We really were at "zero waste" for a while-- we used to keep chickens, and they'd pretty much eat anything leaft over that was "at the point of turning." Unfortunately, we moved to a place that doesn't allow them... but even then we use a little creativity to keep waste to a minimum.

For the most part we intentionally cook enough food for 2 days every time we cook. That way the second day is an easy day and a day off from the endless "what the heck are we going to eat today and whose turn is it to cook?" Sometimes we freeze leftovers to have an easy meal later. And small portions of leftovers get frozen for my MiL so she gets something better than ready meals. Most of the time we eat the same thing twice, but leftover chicken or turkey might get turned into tarteletter. Rice porridge becomes risengrΓΈd...

Yeah, we have shades of that, as well. There are certain things we cook that get made into large batches and frozen as our own version of "TV Dinners." We have an industrial size freezer in the garage, which we mostly got because we grow a fair bit of our own food and wanted to be able to "save for winter."

We are struggling to clear enough store-bought stuff out to have room for the garden harvest. But we don't jhave much this year. The Danish weather has been a nightmare. Tomatoes got blight, potatoes rotted in the mud, celeriac is tiny, cauliflower barely gave anything, spinach went to stock with only 2-3 leaves.... Leeks did well but can stay in the ground for ages.

I also hate letting anything go to waste. It's been suggested I may even be a bit *too* obsessive over it. I hate having to throw food out, and we'll always try to find a way to use it before it goes "sour". Our homemade pizzas have worked great to that effect lately. Anything going bad can almost always be either thrown into a salad, or as an extra topping on one of our diy pizzas. Pretty much always makes for an even more flavorful pie, and very little ends up going to waste! :)

I love cooking new meals with leftovers. When I got married and had to manage the household alone, it was a new responsibility and venture for me so I ended up wasting a lot of food. It made me feel so bad and I cringed deep down each time I had to throw some food in the bin. At that time, I made a commitment to myself to only buy the exact quantity of things I'll be needing and not buy lots of items beforehand. I started using things carefully and began using leftovers a lot so I did not waste food. Honestly, it helped me in many ways. I had less waste and trash to throw and came up with new and exciting ideas to make yummy dishes. :)
