Know Filipino Food: Tuyong Dilis (Dried Achovies)

The Philippines is an archipelago, surrounded by seas and composed of 7, 107 islands, thus we have an abundance of marine life and the fishing industry blooms. We love eating fish. Back in the day, when there were no refrigerators, our ancestors made ways to preserve their catch by air-drying or sun-drying. We salt and dry a lot of kinds of fish. One very popular kind of dried fish is anchovies. These tiny little fishes are a good add-on to veggie dishes such as what we have in the picture. It's a good add-on to fried rice. It's also just good by itself, just dip it in vinegar and put some tomatoes, onions, cucumber or anything you think it good get along with as to the taste. Dried anchovies is salty but not too much, just the natural flavor of the sea.
