It's so simple, but really does have that ricotta-like texture to make it seem like the real thing! I think your vegan friends would enjoy your thoughtfulness if you whipped that out next time for them. The spaghetti squash is so light by itself, so I enjoy pairing it with a really hearty sauce to make sure it fills us both up. I'm definitely into the season where I like most of my meals warm and filling to combat the cold weather. Happy to join again!
