# Scallops in Black Garlic Sauce

<center>Black garlic is a normal garlic that is aged in seawater even in beer and left in a container as an electric steamer at a low temperature for more than 30 days until it acquires a black color and an incredibly delicious flavor with hints of balsamic and tamarind. Like roasted garlic, black garlic is tender and smooth in texture and does not have the raw garlic bite. **How to use Black Garlic**
Use black garlic infuse it in oils or liquefy it to spread or butter. Rub the black garlic cloves into the meat before roasting or baking, or place on top of the meat while cooking to allow the juices to filter. I made a sauce that now I give them the recipe

# Black Garlic Sauce
**Ingredients**
3 cloves of black garlic
2 cloves of white garlic
olive oil
Salt
Steps

# Crunchy pancakes
**Ingredients**
3 1/2 tablespoons of flour all purpose
1 tablespoon of chickpea flour
1 cup of cold water
1/4 teaspoon of salt from the himalayas
2 black garlic cloves
1/4 of cuttlefish ink sachet

**Steps**
Put all the ingredients in the cold water in the processor until you have the consistency of a light soup.
And that mixture in a hot pan is added oil and add the mixture to make small pancakes that are thin even have holes to turn them until they are cooked.
Separate the small pancakes.
I made a pearl of coconut milk just boiled a half cup with lime zest and a little salt and add a teaspoon of agar agar and leave them in the refrigerator in a mold of spheres.</center>

This recipe was made for my husband because I can not eat the scallops I get a little allergy so they are not on my list my husband loved that he said the scallops took a smoky flavor and he really liked the black garlic sauce I just finished it on pieces of toast my hubby does not leave anything to my hahaha.

In the place I put the pancakes first and on top I put the scallops and garnish them with sprouted garlic and alfalfa and the same mixture of the pancakes cook them as a paste and add it as a garnish together with the coconut pearls</center>

Yes my dear Denisse I like to cook a lot and you know that it is not difficult to make the black garlic as I put in the post left in sea water the garlic for 10 minutes and then the water is strained and allowed to dry and made put in an electric rice cooker for example and there and leave in the slowest of hot for 30 days and they move from time to time and in the end they come out black and tasty besides medicinal properties to help people with diabetes and magnesium, B12 and potassium and more than now I do not remember.
These black garlics have been used by the Chinese before we were civilized and you can imagine yourself!

Yes the garlic comes well with scallops almost all the sea food my husband loves I do not eat them because I get allergies, my hubby told me that the taste with black garlic is smoky and delicate at the same time, that was his opinion .
