Today while looking at some old photos , I found a folder which dated exactly 10 years back...that is September 2007!!! During that time, I was still a Chef De Partie, and my role was responsible of a small team of a fine dining kitchen. I had a French Chef at that time and the team I was responsible for consisted of myself and 2 more guys. Looking at the photos, I realized how the world of cooking has changed! Even my style of cooking and plating has so much changed and if you are following my blog you will surely notice the evolution. So let me show you some of the plates I made together with my team back then! Jelly coated duck liver and wild mushroom with an idea to resemble a truffle sitting on a lemongrass jelly and fresh mango! The strawberries were macerated in their juice, basil, lime juice and cognac! hehe you do look slim and young in that pic!! But the endearing bright smile still remains =) I do notice a difference in your plating now and 10 years ago. Definitely your plating of today is much more stunningly beautiful, modern, perfectionistic, and made up of tiny little components and techniques. Ten years ago, the beauty was a little more chunky and and rustic :) but still attractive and belonging in the fancy-food category. Was fun to see a piece of your cooking journey. Yeah I understand my friend, i have some fellow colleagues who just does not like refined cuisine like I do, it's about everyone's taste. I love rustic too, but again with a modern presentation. I think both modern and rustic has it's market as people are different anyway. For me personally I love eating rustic food with great taste and from this taste memories I translate it to my dishes. Making my cooking to be a refined one but same great taste!

Great post! I think your older platings are really nice. And would still be "Progressive" today. You latest platings are more refined though. I like them both! The tilted glasses do make me laugh though! They were awesome! I love looking back at how I used to cook. My wife, who is a pastry chef, and I were recently laughing about how we used to cook when we worked in fancy restaurants. Or more specifically, what was considered "fancy" back then. When I left working in Michelin starred restaurants and became a private chef I had to learn how to present food in a more casual "family" style. Now I prefer unrefined presentations or "country" style of serving food in casseroles vs doing plated style. But I still like to go out to eat in super high end restaurants and seeing what people are doing. A few months ago we were visiting my wife's family in Bangkok and we ate at [Gaggan](http://eatatgaggan.com). I was really inspired by his take on modern Indian food and his flavor combinations and plating style.

So you dined at Gaggan man!? Wow! Chef Anand Gaggan is such an inspiration for me, he is the one who created the Progressive Indian Cuisine! That must have been a great experience indeed! I hope i get that chance one day! I have been in contact with him last year, but then I got sick and could make go to meet him up!

Gaggan was a great meal. You should reconnect with him. He is a very cool guy and from what I experienced he is very approachable. He came out to our table and talked to us for awhile. He did a stage at El Bulli and so did my wife. But my wife was at El Bulli in 2000. His menu was very innovative, he printed it using emojis! It is funny, when we went I said to her, "we should just enjoy the meal and not try to document it!"
